
La Popote, a renowned French restaurant in Cheshire recognized by the Michelin Guide, has made waves by introducing the UK’s first exclusive ‘Water Menu’, redefining fine dining for non-alcoholic drinkers. A Unique Concept for the Modern Diner
The restaurant’s co-owner and head chef, Joseph Rawlins, explains that the concept was born from a shift in consumer preferences. “Over the last 18 months, we’ve noticed that many people are looking for alternatives to traditional wine pairings,” Rawlins shared. “We wanted to offer something distinct, something that enriches the dining experience.”
Collaborating with certified UK water sommelier Doran Binder, the water menu showcases an impressive range of waters from the UK, France, Spain, Portugal, and Iceland. The curated selection includes options starting as low as £5 for Crag Spring Water—Binder’s own brand—and reaches up to a premium £19 for the Palace of Vidago sparkling water from Portugal.
The Story Behind the Water
Doran Binder’s journey as a water sommelier began in 2016 when he purchased the Crag Inn pub in Wildboarclough, Cheshire. Beneath the property lay an untouched aquifer producing exceptionally high-quality spring water. Recognizing its potential, Binder shut the pub and began bottling the water, branding it as Crag Spring Water.
After spending several years crafting and perfecting a water menu, Binder approached La Popote with the concept. “At first, they laughed and weren’t sure what to make of it,” recalls Binder. “But after a water tasting session, they quickly realized that water offers as much complexity and variety as wine.”

Each bottled water on the menu comes with detailed tasting notes, offering variations in taste, texture, and “mouth-feel,” delivering a sophisticated experience for patrons. According to Binder, “This menu is designed to elevate the dining experience for non-drinkers and provide them with a luxurious, tailored alternative to a wine menu.”
Beyond the water menu, La Popote maintains an extensive wine list with prices ranging from £28 to £400 per bottle. Alternatively, diners can opt for complimentary tap water served in elegant wine glasses.
